SHEPHERD’S PIE

INGREDIENTS | SERVES 10 PAX

1.5kg Potato, peeled
3 tbsp Salted Butter
2 Onions
5 Cloves Garlic
Salt
300ml Cooking Cream (All purpose Cream)
3 tbsp Olive Oil
500g Minced Beef
3 tbsp Chopped Olive
Black Pepper
3 tbsp Parsley
300g Mozzarella Cheese
Chopped Green Olives

MASHED POTATO
1. Peel the potatoes and boil until soften. Mash the potato and set aside.
2. In a pot, place knob of butter and sauté 2 chopped garlic and 1 onion. Add the potato, salt and milk and cook to further soften the potato. Add in the cooking cream. Season with salt and pepper. Stir continuously until well mixed. Put aside to cool.

MINCED BEEF
1. In a pot, add the olive oil and sauté the remaining chopped onion and garlic. Add the minced beef, olives, and season with salt and pepper. Add the chopped parsley when the beef is well cooked.

PREPARATION
1. In a Glass casserole, line the base with half the mashed Potato. Sprinkle half the cheese over and layer the minced beef on top.
2. Cover the meat with the remaining potato and sprinkle remaining cheese over.
3. Finish in preheated oven (200 deg) with Grill function to melt the cheese for 20 mins. Alternatively, with the Microwave Oven, use the Turbo Grill function with high grill for 15 minutes. Serve hot.
