BRAZILIAN CHEESE BREAD (PÃO DE QUEIJO)

INGREDIENTS | SERVE 60 PIECES CHEESE BREAD

150ml Olive Oil
300ml Milk or Soy Milk
1 tbsp Salt
500gm Tapioca Flour
1 Tbsp Baking Powder
125gm Shredded Parmesan
250gm Shredded Cheddar Cheese
2 Eggs


PREPARATION
1. Preheat Oven under Conventional function to 200°C. Alternatively, preheat the Countertop Microwave oven with Forced Air function at 200°C.
2. Pour olive oil, milk, and salt into a large saucepan, and place over high heat. Stir gently until mixture comes to a boil and remove from heat. Stir in tapioca flour and baking powder and mix until smooth. Set aside to rest for 10 to 15 minutes.
3. Stir the cheese and egg into the tapioca mixture until well combined with chunky like cottage cheese texture. Drop rounded, ¼ cup-sized balls of the mixture onto an ungreased baking sheet.
4. Bake in preheated oven or preheated Microwave oven for 15 minutes using Forced Air at 200°C or until the tops are lightly browned using the low rack. Consume warm.

TIPS
Do not set aside for too long before making into ball shape. If not going to bake immediately, freeze the balls. Remove from freezer and bake immediately.
